Black Eyed Cabbage Salad
Such a wonderful salad tossed with a fabulous Asian style dressing.

Ingredients
8 servings
- ½ head green cabbage, (shredded)
- ½ head purple cabbage, (shredded)
- ½ cup slivered almonds, (toasted (see notes below))
- 1 tablespoon poppy seeds
- ½ cup canola or vegetable oil
- 4 tablespoons granulated white sugar
- 6 tablespoons rice vinegar
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 1¼ cups chow mein noodles ((the crunchy noodles))
Steps

In a large bowl, toss together the green cabbage, red cabbage, slivered almonds and poppy seeds.

Combine the dressing ingredients in a jar, and shake to combine.

When ready to serve, toss the dressing (as much as you'd like- perhaps not all of it) with the salad. Sprinkle in the chow mein noodles and toss to combine.
