Ingredients

  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup unsalted Challenge butter (1 stick, softened )
  • 1 cup granulated sugar
  • 2 large eggs
  • ⅓ cup milk
  • ½ cup mashed bananas (about 2 small ripe bananas)
  • 1 teaspoon fresh lemon juice
  • ½ cup finely chopped pecans (optional)
  • 4 ounces cream cheese (softened)
  • 3 tablespoons unsalted Challenge butter (softened)
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 ½ cups powdered sugar

Steps

  1. Preheat the oven to 350°F. Grease a 9x13 pan.

  2. Mix flour, baking soda, cinnamon and salt in a bowl and set aside.

  3. Cream butter and sugar with hand mixer until fluffy.

  4. Add eggs, milk, mashed banana, & lemon juice. Mix well.

  5. Stir the flour mixture and chopped nut into the wet mixture.

  6. Spread into the prepared pan and bake for 20 to 25 minutes or until a toothpick comes out clean. Cool completely.

  7. While the bars are cooling, beat cream cheese and butter with a hand mixer until fluffy. Mix in vanilla and a pinch of salt.

  8. Add powdered sugar, a bit at a time, until incorporated. Spread over the banana bars and serve.
