- 4 cups romaine lettuce (shredded, or cobb lettuce)
- 14 ounces chickpeas (canned, rinsed and drained)
- 14 oz grape tomatoes (halved, or cherry tomatoes)
- 3.5 oz reduced fat feta cheese
- 2 hass avocados (pitted and chopped)
- 1 pinch salt (to taste)
- 1 pinch black pepper (to taste)
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
Steps
In a medium bowl, combine salad ingredients. Set aside.
Whisk the dressing ingredients together in a serving jug.
Pour the dressing over the salad; season with salt and pepper to taste. Serve.
