Ingredients

4 servings
  • 4 cups romaine lettuce (shredded, or cobb lettuce)
  • 14 ounces chickpeas (canned, rinsed and drained)
  • 14 oz grape tomatoes (halved, or cherry tomatoes)
  • 3.5 oz reduced fat feta cheese
  • 2 hass avocados (pitted and chopped)
  • 1 pinch salt (to taste)
  • 1 pinch black pepper (to taste)
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar

Steps

  1. In a medium bowl, combine salad ingredients. Set aside.

  2. Whisk the dressing ingredients together in a serving jug.

  3. Pour the dressing over the salad; season with salt and pepper to taste. Serve.
