Ingredients

4 servings
  • 2 -3 large jicamas peeled and sliced
  • 1/4 cup olive oil
  • 1/4 cup grated parmesan
  • 1 teaspoon garlic
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Steps

  1. Preheat oven to 425 degrees F.

  2. In a large bowl add the jicama and fill with water until covered.

  3. Microwave for 10 minutes or until tender. (You can also boil them for 5 minutes on the stove.)

  4. Strain and dry the jicama.

  5. Add them to a bowl with the olive oil, garlic, paprika, Italian seasoning, parmesan, and salt and pepper.

  6. Place on a baking sheet with parchment and bake for 25-30 minutes or until crispy.

  7. Serve with fry sauce or ketchup.
