Ingredients

8 servings
  • 2 pounds Brussels sprouts (halved lengthwise, quartered if large)
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • ⅔ cup heavy whipping cream
  • ¼ teaspoon onion powder
  • 1 ⅓ cups shredded sharp cheddar cheese (divided)
  • ¼ cup shredded Parmesan cheese

Steps

  1. Preheat oven to 375°F.

  2. Rinse brussels sprouts and remove any wilted outer leaves. Cut them in half (or quarters if they are large).

  3. Toss halved Brussels sprouts with olive oil, salt, and pepper. Cook in a skillet over medium-high heat for 5 to 6 minutes or until tender-crisp and slightly browned. Pour into a 2 qt dish.

  4. In the same skillet, heat heavy cream, onion powder, salt, and pepper until boiling. Reduce heat and let simmer over medium heat for 2 minutes to thicken slightly.

  5. Remove from heat and whisk in parmesan cheese. Stir in 1 cup of cheddar cheese. Pour over Brussels sprouts.

  6. Top with remaining ⅓ cup cheddar cheese and bake for 20 to 25 minutes or until browned and bubbly.
