Autumn Salad
Love this quick and easy recipe that makes a delicious salad with apples, blue cheese and pecans.

- ¼ cup extra virgin olive oil
- ¼ cup apple cider vinegar
- 2 tablespoons minced shallots
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon maple syrup
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 bunch red leaf lettuce, (chopped)
- 1 bunch green leaf lettuce, (chopped)
- 2 medium red delicious apples, (skin on)
- ¾ cup crumbled blue cheese
- ¾ cup toasted pecans, (chopped)
Steps
Put all dressing ingredients into shaker and refrigerate.
Place lettuce on 8 salad plates. Cut apples into thin wedges and place them on the lettuce. Sprinkle pecans and blue cheese evenly over each salad.
Drizzle chilled dressing over the salads.
