Asparagus Apple Salad with Blue Cheese Vinaigrette
Blue Cheese Vinaigrette makes a wonderful dressing for this green salad.

- ¼ cup (1 ounce) crumbled blue cheese
- 2 tablespoons chopped fresh parsley
- 2 tablespoons white vinegar
- 1 tablespoon water
- 1 teaspoon granulated white sugar
- 2 teaspoons Dijon mustard
- 1 teaspoon extra virgin olive oil
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 2 cups (2-inch) diagonally cut asparagus
- 4 cups torn butter lettuce ((or red leaf))
- 2 cups thinly sliced Gala apple
- additional blue cheese crumbles, (optional)
Steps
In a small bowl, whisk together the dressing ingredients.
In a medium pot of boiling water, cook the asparagus for just 1 minute. Drain and rinse under cold running water; drain and pat dry.
In a large bowl, combine the asparagus, lettuce, and apple. Drizzle with vinaigrette; toss gently to coat. Top individual servings with blue cheese crumbles, if desired.
