Ingredients

6 servings
  • ¼ cup (1 ounce) crumbled blue cheese
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons white vinegar
  • 1 tablespoon water
  • 1 teaspoon granulated white sugar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon extra virgin olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 2 cups (2-inch) diagonally cut asparagus
  • 4 cups torn butter lettuce ((or red leaf))
  • 2 cups thinly sliced Gala apple
  • additional blue cheese crumbles, (optional)

Steps

  1. In a small bowl, whisk together the dressing ingredients.

  2. In a medium pot of boiling water, cook the asparagus for just 1 minute. Drain and rinse under cold running water; drain and pat dry.

  3. In a large bowl, combine the asparagus, lettuce, and apple. Drizzle with vinaigrette; toss gently to coat. Top individual servings with blue cheese crumbles, if desired.
