Arugula with Pomegranates, Blue Cheese and Pistachios

- 4 cups arugula
- 1/2 cup pomegranate arils from POM Wonderful
- 1/4 cup crumbled blue cheese
- 2 tbsp pistachios (shelled)
- Pomegranate Vinaigrette
- 1 tsp POM Wonderful pomegranate juice
- 1 tsp balsamic vinegar
- 2 tsp extra virgin olive oil
- salt and fresh pepper
Steps
Whisk vinegar, pomegranate juice, olive oil, salt and pepper in a small bowl.
Place arugula on two plates, top with blue cheese, pomegranates, pistachios and vinaigrette.
