Ingredients

  • 1 medium head green cabbage (shredded thin, about 8 cups)
  • 1 medium yellow onion (thinly sliced, about 1 cup)
  • 1 cup white sugar
  • ¾ cup vinegar
  • ⅓ cup light flavored olive oil
  • 1 teaspoon celery seed
  • 1¼ teaspoons kosher salt
  • 1 teaspoon yellow mustard
  • ¼ teaspoon freshly ground black pepper

Steps

  1. Combine the cabbage and onion in a large bowl and set aside.

  2. Combine the sugar, vinegar, oil, celery seed, salt, mustard, and pepper in a small saucepan and bring to a boil. Reduce the heat and simmer, stirring frequently, until the sugar has dissolved, about 3 minutes.
