Air Fryer Acorn Squash
Acorn squash with a hint of brown sugar, butter, and cinnamon, air fried until tender & golden.

- 2 small or medium acorn squash
- 1 tablespoon olive oil
- ¼ teaspoon kosher salt (or to taste )
- 1 tablespoon butter (melted)
- 1 tablespoon brown sugar
- ⅛ teaspoon cinnamon
Steps
Preheat the air fryer to 370°F.
Cut the squash in half and scrape out the seeds with a spoon.
Coat the squash with olive oil and sprinkle with salt.
Place in the air fryer basket, cut side up, and cook for 15 minutes.
While the squash is cooking, combine melted butter, brown sugar, and cinnamon.
Open the air fryer and brush with the brown sugar mixture. Cook an additional 10-15 minutes or until the flesh is tender and slightly golden.
