  • 1¼ pounds cremini or button mushrooms, (sliced)
  • 8 ounces shiitake mushrooms ((stems removed and caps sliced))
  • 2 cups chopped celery
  • 1 cup chopped fresh parsley
  • 1 cup coarsely chopped toasted hazelnuts
  • 3 tablespoons chopped fresh thyme ((or 1 tablespoon dried))
  • 2 tablespoons chopped fresh sage ((or 2 teaspoons dried))
  • 2 large eggs, (beaten to blend)
  • 3/4 cup canned low-sodium chicken broth
