White Chocolate Cherry Shortbread Cookies

• 2½ cups all purpose flour
• 1/2 cup granulated white sugar
• 1 cup (2 sticks) cold butter, (cut into pieces)
• 4 ounces white chocolate, (finely chopped)
• 1/2 teaspoon almond extract
• 2 to 3 drops red food coloring ((optional))
• 8 ounces white chocolate (or vanilla candy disks)
• 2 teaspoons shortening
