  • ½ Tbsp potato starch or cornstarch ((to clean the shrimp))
  • 1 pinch Diamond Crystal kosher salt
  • 1 Tbsp sake
  • 6 oz broccoli florets
  • 1 avocado
  • 2 large eggs (50 g w/o shell)
  • 1 Japanese or Persian cucumber ((I use Persian cucumber here))
  • 2 –3 Tbsp Japanese Kewpie mayonnaise
  • 1 tsp milk ((or heavy cream))
  • ½ tsp Diamond Crystal kosher salt
  • freshly ground black pepper
