  • ½ tsp yuzu kosho (Japanese citrus chili paste)
  • juice of ½ lime
  • ½ red onion
  • ½ Persian cucumber
  • ½ jalapeño pepper
  • 1 Tbsp sweet chili sauce
  • 1 Tbsp fish sauce
  • 1 Tbsp non-oil aojiso dressing ((you can substitute 1 Tbsp of this dressing with ½ tsp of ponzu))
  • 5 tsp ponzu
  • 2 Tbsp water
  • 2 tsp sugar
  • 1 clove garlic
  • 3 Tbsp neutral oil
  • ½ lb sashimi-grade yellowtail (hamachi)
  • ⅛ tsp Diamond Crystal kosher salt
  • 1 Tbsp of crushed fried garlic chips
  • Golden Mustard
  • 1 Tbsp of chopped cilantro (coriander)
  • 1 slice lime
