  • 1/4 cup grated manchego cheese (plus more for topping)
  • 2 cloves garlic
  • zest of 1/2 a lemon
  • juice of 1/2 a lemon
  • 1/4 cup olive oil
  • 1/4 teaspoon crushed red pepper flakes (optional)
