  • 1 avocado
  • ½ cup mayonnaise, best quality such as Hellmann’s or Duke's
  • 2 tablespoons sriracha
  • 1 lb chicken tenders
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups panko breadcrumbs
  • ¾ teaspoon salt
  • Vegetable oil, for cooking
  • 4 cups cooked white rice (jasmine or sushi rice work well)
  • Sesame seeds (optional)
