Apricot Pie Recipe

• 1 recipe for Flaky Cream Cheese Pastry Dough (Se Notes Section)
• 2 1/2 lbs fresh ripe apricots (pitted and sliced into 1/2" thick slices)
• 1 Tbsp lemon juice
• 1/4 cup granulated sugar
• 2 Tbsp all-purpose flour
• 1 tsp cinnamon
• 1/8 tsp salt
• 1 egg whisked together with 1 Tbsp cold water
